Below is the Sri Lankan Chicken curry recipe adapted from Food Corner recipe blog. For cooking this Sri Lankan chicken curry, you will need a range of spices. Although the recipe requires Sri Lankan curry powder and if you cannot find it easily, try using garam masala. Otherwise, you can easily grind cumin seeds, coriander seeds, and other necessary spices to make your own Sri Lankan curry powder.
For this chicken curry, you can use boneless chicken breast or even a whole chicken cut into pieces. Always use fresh spices in order to get the best appearance and taste.

Recipe: Sri Lankan Chicken Curry
Ingredients:
250g Chicken
1 medium-sized onion sliced
1-2 green chili sliced
1 tomato cut into pieces
1 tspn ginger garlic paste
1 tspn mustard seeds
2 tspn red chili powder
2 tspn Sri Lankan curry powder
½ tspn turmeric powder
1 tspn fenugreek seeds
1 sprig curry leaves
1 piece of cinnamon
1 piece of lemongrass
2 tspn cooking oil
1 cup thick coconut milk
Salt to taste.

Method:
Wash clean and drain water from chicken. Cut into bite-size pieces. Keep aside.
In a cooking pot, heat oil. When it is hot, add mustard seeds.
When mustard seeds start popping out, add onion, ginger garlic paste and curry leaves. Stir fry.
When the onions are tender, add chicken pieces. Fry while mixing.
Then add all spice ingredients. Mix well.
Add tomato pieces and cook in low flame until tomatoes are tender. Finally add coconut milk and mix well.
At this stage add water and cover. Cook till chicken is done.
Adjust salt as per taste.
Simmer till coconut milk start boiling. Make it thick gravy by cooking for few more minutes.
